Don't be fooled by the name of this legendary PEI oyster operation. Leslie Hardy (that's him pictured) may well be the king of the Malpeque oyster, and he and his wife Shirley do indeed have a bunch of sons. But it's not only the Hardy boys who've found their way into various parts of the oyster world—they're joined in various ways by counteless grandchildren, in-laws and daughters, including Janet, a world-record-setting shucking champion. All of which is to say a lot of love, care and tradition goes into growing Hardy oysters, and you can taste it in every one.
